Which CCIE would people recommend after CCIE Enterprise?
I’m not interested in service provider, as I’m not planning to work for a SP
So I guess that leaves Datacentre or Security.
Any ideas on cost (rack rental) and which one is more achievable?
DC or SEC but prob best to go with a cloud cert.

CCIE Security would be my preference as it gives you a broader scope. The other advantage of CCIE Security is the ease of being able to do the labs.

Is it possible to do the whole security lab on eve, rather than having to rent racks?
Yes. The Whole Security Lab on Eve. You do need a powerful Box. (128 GB - RAM).
